This simple spring bread is traditionally baked while focusing on hopes for the coming year.

Ingredients

• 3 cups strong white flour

• 500 ml buttermilk

• 1 tsp baking soda

• 3 tsp ground almonds (optional)

• 3 tbsp golden syrup

• juice of 2 lemons

• 1 beaten egg (for glaze)

• soft brown sugar

How to make it

Mix the flour and almonds in a bowl.

Create a well in the center and add the buttermilk, lemon juice, and golden syrup.

As you mix the dough, think about your wishes and intentions for the year ahead.

Repeat three times:
